Savoy Cabbage: Mild, Earthy, Healthy, Delicious

Of all the cabbages, we think the Savoy cabbage is the prettiest and we love the mild and earthy flavor. Red cabbage has been deemed “the healthiest,” but that doesn’t mean all the other cabbages aren’t awesome for your health, too.

Savoy cabbage is a good source of Protein, Thiamin, Calcium, Phosphorous and Copper. It’s an excellent source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Folate, Magnesium, Potassium, and Manganese.

To recognize it when shopping, you’ll see that they’re shaped like green cabbages, but the leaves are deep green and extremely crinkled. You want to look for heads that are compact and tight, but have a litte more give when you gently squeeze because of the all the wrinkle and crinkles.

The leaves are tender, even when raw, and are great additions to salads. You can also thinly slice savoy cabbage and add it to soups and stir fries.

Savoy Cabbage, Chickpeas, Mustard Seeds and Yogurt Recipe

Here’s our favorite Savoy Cabbage and Chickpeas with Mustard Seeds and Yogurt recipe from Bon Appetite.

Ingredients

  • 2 tablespoons olive oil
  • 2 shallots, thinly sliced
  • 2 teaspoons mustard seeds
  • 1 15-oz. can chickpeas, rinsed
  • ½ head savoy cabbage, cored cut into 1″ strips
  • Kosher salt, freshly ground pepper
  • 1 tablespoon white wine vinegar
  • ½ teaspoon crused red pepper flakes
  • 1 cup plain Greek yogurt

Recipe

  • Heat oil in a large skillet over medium-high heat. Cook shallots and mustard seeds, stirring occasionally, until shallots soften and mustard seeds begin to pop, about 3 minutes. Add chickpeas, cabbage, and 2 cups water; season with salt and pepper. Bring to a boil, reduce heat, and simmer, covered, until cabbage is very tender, 10–12 minutes. Uncover and cook until liquid is almost completely evaporated, about 3 minutes. Stir in vinegar and red pepper flakes; season with salt, pepper, and more vinegar, if desired.
  • Season yogurt with salt and pepper. Spread yogurt onto a serving platter and top with cabbage and chickpeas.

Ginger, Garlic, Savoy Cabbage Recipe

Ingredients

  • 1 head savoy cabbage
  • 2 tablespoons olive oil or other oil
  • 1 tablespoon minced garlic
  • salt & pepper
  • 1 and 1/4 tablespoons ginger, minced
  • juice of 1 lime

Recipe

  • Heat wok or large skillet medium high heat, wait until oil is hot.
  • Add cabbage and stir fry until cabbage just starts to wilt (do nor overcook).
  • Add garlic, salt and pepper cook 1 minute.
  • Add ginger cook 1 minute.
  • Drizzle with lime juice and serve.
